Chisanchi or “fried trio” is a Chinese dish that is very popular in Chinese restaurants and bistros. It is made with three vegetables – potatoes, eggplant, and peppers. Very tasty!
Despite the fact that chisanchi is made with vegetables, the dish is quite hearty, since all the vegetables are pre-fried. It is delicious as a separate dish or as a side dish to lean meat. The dish can be cooked in olive oil, but in China more often use sesame oil.

Eggplant – 1 Piece
Bulgarian pepper – 1 Piece (large)
Potatoes – 3 – 4 pcs.
Garlic – 2 cloves
Soy sauce – 100 ml
Sugar – 1 Art.
Water – 3 tablespoons
Starch – 1 tablespoon
Olive oil – 100 ml (or sesame oil)
Salt – 1 teaspoon (for eggplant)


Wash the eggplant, cut into cubes and sprinkle with salt. Set aside for 30 minutes. Then drain off any excess liquid and rinse eggplant with cold water. Pat dry.
Peel, wash, and cut the potatoes into slices. Rinse the slices of potatoes from excessive starch and dry them again. Saute the potato slices in olive oil until soft, then place on a plate.
Next, in the same oil, fry the peeled and sliced peppers. Fry until half cooked, then remove.

The last step is to fry the prepared eggplant. Fry for 3-4 minutes, stirring, then add the sugar. Cook for another 1-2 minutes.
Then add potatoes and peppers to eggplant, pour in soy sauce and fry for 4-5 minutes.
Mix the starch with water and pour it into the pan. Braise for another 5-7 minutes.

Add minced garlic a minute before it is ready.
That’s it, the dish is ready!
